Vegetarian Recipe: 'Asparagus Saute'

Here's a great and nutritious and very easy vegetarian recipe for you to try...

 

 ASPARAGUS SAUTÉ  

  • 2 cups fresh asparagus
  • 1    teaspoon grated onion or 1 garlic clove
  • 2    tablespoons olive or peanut oil
  • Coarse salt and coarse black pepper, as de­ sired  

Method:

  1. Break asparagus into pieces 2 inches long, place in sauce­pan with oil, season.
  2. Add garlic section or grated onion and warm quickly over low heat for about two minutes.
  3. Serve drizzled with a dash of olive oil as a side dish of some mashed potatoes and tofu steaks.
