Vegetarian Spinach Cakes
"Vegetarian Style Spinach
Pancakes"
A great and hearty recipe for anytime of the year . . .
Ingredients for Your SPINACH
CAKES:

2 cups fresh spinach, chopped fine
-
2 egg-replacer,
beaten
-
1 tablespoon grated
onion
-
3 tablespoons whole wheat
flour
-
2 tablespoons olive, corn or
peanut oil
-
½ teaspoon coarse salt ¼
teaspoon red crushed pepper
A real surprise in
pancakes. Full of the benefits of spinach, mentioned in the
above recipes.
Cooking
Method:
- Combine spinach with
egg-replacer, onion, flour, and oil seasonings in a
bowl.
- Make cakes small
cakes with your hands.
- Drop cakes on pan
with light film of oil and using low heat, turn them
over as soon as they have the
consistency
necessary. Should be about ½ minute on each
side.
- Serve with some tofu
scramble or a drizzle of tomato
salsa.
