Vegetarian Spinach Cakes

"Vegetarian Style Spinach Pancakes"

A great and hearty recipe for anytime of the year . . .

 

Ingredients for Your SPINACH CAKES:

  • 2 cups fresh spinach, chopped fine
  • 2 egg-replacer, beaten
  • 1 tablespoon grated onion
  • 3 tablespoons whole wheat flour
  • 2 tablespoons olive, corn or peanut oil
  • ½ teaspoon coarse salt ¼ teaspoon red crushed pepper

A real surprise in pancakes. Full of the benefits of spinach, mentioned in the above recipes.
 
Cooking Method:

  1. Combine spinach with egg-replacer, onion, flour, and oil seasonings in a bowl.
  2. Make cakes small cakes with your hands. 
  3. Drop cakes on pan with light film of oil and using low heat, turn them over as soon as they have the consistency necessary. Should be about ½ minute on each side.
  4. Serve with some tofu scramble or a drizzle of tomato salsa. 

This recipe is full healthy nutrients from various sources and is a great and balanced meal for the whole family.
