Vegan Christmas Recipe #1:
Pancakes
Many vegans don’t eat pancakes, as they
don’t know how easily they can be veganised. Forget the
long list of ingredients; this recipe will knock your
socks off! Pancakes work well on their own, served with
ice-cream, or as a side to a main
dessert.
Ingredients

Self-raising
flour
-
Rice
milk
-
Syrup
(optional, choose your own type of
syrup)

Anything you
want to put in the pancakes (such as
banana)

Preheat a
stove; you want it hot, 180-200 degrees is a
good setting. Oil a frying
pan.

Blend the
self-raising flour and rice milk in a blender.
How much rice milk you’ll need depends on the
texture of the milk, but aim for approximately
1/3 milk, 2/3 self-raising flour, and then
tweak the measurements to your preferences.
The mixture should be thick, but runny enough
to come off a spoon easily
enough.

Add syrup
(or sugar) to taste, and blend again. Make
sure anything else you want to add is diced
into small enough pieces so that the pancakes
do not lose their shape, and add them to the
mixture. Don’t blend again as these pieces
will be blended away. Pour the mixture into
the pan in pancake sizes, and flip each
pancake once bubbles start to form. Pancakes
should be a light golden-brown
colour.
Vegan Christmas Recipe #2:
Silverbeet salad
Some people will find this salad to be
too strong for their liking, but for those who love their
lemon; this recipe will go down a
treat.
Ingredients

1 silverbeet
bunch
-
1-2
lemons
-
Salt
(optional)
Boil the silverbeet on a stove, and
chop lemons in half. Strain the silverbeet and place in a
large bowl. Pour the lemon juice all over the silverbeet;
excess lemon juice doesn’t matter, it can sit at the
bottom of the bowl. Refrigerate until just before serving
time. Sprinkle salt to taste for extra flavour if
desired.
Vegan Christmas Recipe #3:
Christmas coloured pasta
salad
This salad works as a fantastic main
meal, and can also be used as a small side dish. Cold
pasta is often frowned upon, but in this case, be daring
enough to try it!
Ingredients

Pasta
(preferably
spirals)

1 cup Green
peas
-
1 cup diced
red capsicum
-
½ cup finely
chopped spinach
-
½ cup
tomato
-
Green herbs
of choice
(optional)
-
Vegan
mayonnaise (Praise 97% fat free mayonnaise is
vegan)
-
Tomato sauce
(optional)
-
Lemon juice
(optional)
-
Boil pasta
on the stove. Once boiled, strain the pasta
and place in large
bowl.

Add
mayonnaise and tomato sauce (if using) to
taste and mix well. Don’t go overboard or else
the mayonnaise will be too dominant; for a
large bowl, use half a cup of
mayonnaise.

Squeeze the
juice of half a lemon (if using) into the
pasta. Add green peas, red capsicum, spinach
and tomato and mix well. Sprinkle herbs over
top when finished.
Refrigerate.
Vegan Christmas
Recipe #4:
Pumpkin/vegetable soup
Served with a nice bread, this recipe
works as a nice entrée before the beautiful main
meal.
Ingredients
-
Boil pumpkin
and potatoes until soft. Blend with as much
soy milk is needed until desired consistency
is achieved.

Chop carrot,
tomato and mushrooms into smaller pieces and
blend with pumpkin, potatoes and soy
milk.

Add
vegetable stock to taste; as a guide, use half
a teaspoon of vegetable stock per cup of
soup.
